Menu Plan(9/12-9/18)

Another week of menu planning. I was bad about it last week. I went to the grocery store twice for meals those days. And the rest of the week was either left overs or sandwiches. I just wasn't in the mood to cook & nothing sounded good. Crazy how I can go from one week of craving tons of things to the following week have a desire for nothing.

Breakfast-pumpkin chocolate chip muffins(x2), cereal(x2), egg & cheese burritos(x2), eggs & toast

Lunch-turkey wraps(x2), sandwich skewers(x2)...not sure what else. Lunch has kind of been a play it by ear thing.

Of course fruit & veggies will be added to lunch & fruit to breakfast as well...depending on what I get at the grocery store.

Monday-BLT Salad & bread

Tuesday-Crescent chicken, green beans & mashed potatoes(dinner for a neighbor who had a baby doubled for us to eat too)

Wednesday-Leftovers

Thursday-Sloppy Joe Loaf & veggies

Friday- oven baked Chicken fingers(buffalo for Jason) & salad

Saturday-leftovers

Sunday-Braves game (if home for dinner southwest cornbread casserole)

Menu Plan (8/29-9/4)

Another week of meal planning. By far breakfast & lunch are the most difficult to plan. It is so easy to want to fall back on cereal & sandwiches. Those don't take much work or thought. So I am really trying to plan better breakfast & lunches with some variety.

Breakfast- eggs, toast, & fruit(x2), cereal & fruit(x3), english muffins & fruit(x2)

Lunch-Turkey ranch pinwheels(x2), grilled chicken on salad(x2), macaroni & cheese...all lunches served with fruit & veggies

Monday-marinated chicken, veggies & brown rice

Tuesday-tacos & black beans

Wednesday-left overs

Thursday-Baked ziti,(a family favorite) bread, & salad

Friday-out

Saturday-leftovers

Menu Plan (8/22-8/28)

Once again I will be linking up with Desiring Virtue & sharing our menu plan for the week with her Menu Mayhem. A great place to get ideas if you are stumped for dinner ideas. I know it really helps me because sometimes it feels like we have eaten the same things for months. I really do enjoy cooking and like to try new things, but we fall into the pattern of eating the same things. I notice this more as seasons come to an end. Summer is ending & I feel like we are just circling our summer meals. Because some of the things I am ready to eat are too fall to eat in summer. Do you have foods you only eat during certain times of year? I know I could make them whenever, but something about soup that is just right for cool nights & so wrong for super hot summer evenings.

Ok on with the meal plan for the week. Changing it up a little. I am just going to list our plan for breakfast & lunch together not a specific day. As it seemed last week we just ate what we felt like not paying attention to what day I had assigned it. Dinner I mostly stick to the day it is planned, although you will see a couple things repeated this week that we didn't get to last week.

Breakfast-
eggs, toast, & fruit (x2), blueberry muffins(x2), breakfast burritos(x2), & cereal

Lunch-
leftovers, chicken salad(x2), turkey sandwiches, blts(x2), all with fruit, & veggies

Dinner-
Monday-Enchiladas, spanish rice, & corn(carried over from last week)
Tuesday-chicken tetrazzini, veggies, & bread
Wednesday-Left overs
Thursday-Chicken strips, potatoes, & veggie(carried over from last week)
Friday-pizza & veggies
Saturday-left overs
Sunday-dinner at my mom's

What's for Lunch?

What do you eat for lunch? For me lunch seems to be the hardest meal to plan.

Breakfast is easy: usually I make a big batch of waffles to have in the freezer for easy toasting, some mornings we do cereal, or oatmeal, and others we do eggs.

Dinner is fun to plan! I enjoy cooking and have fun going through blogs, cookbooks, and other recipes deciding what to cook for dinner that week. I do a weekly menu plan and it works great.

But then there is lunch. Lunch is usually just Jake & I. And really I don't want to have to "cook" another meal. I want something that is easy to put together, but tastes good. Sometimes we eat leftovers, but I am really not a big leftover fan. Lately lunch has been sandwiches, with a veggie, pretzels and fruit. The sandwiches aren't too fancy tuna, chicken salad, or turkey. We have been know to switch it up and make the sandwich into a wrap instead of eating it on bread. But still pretty boring and normal.

This sandwich option is easy. The ingredients last us most of the week. With a lunch out here and there or leftovers. And doesn't add a whole bunch to our weekly grocery budget.

Through the wonderful world of internet & The Ultimate Blog Party going on at 5 Minutes for Mom I have discovered several blogs with tons of great lunch ideas. Most of these lunches are fun for Jake, but are adaptable for me (you know I don't really need my food cut out into shapes, but I can still eat the ingredients).

Do you struggle with lunch like I do? I have put together a small list of blogs or other online resources that list great lunch ideas. I haven't tried any of these recipes yet, but will be adding some to our meal plan. Some of the sites might contain info I don't agree with or use ingredients that I would not. Since I was only looking for lunch ideas I didn't look around a lot on the sites. And ingredients I wouldn't use will be replaced with stuff we like.

Have you heard of bento lunches? They are kind of becoming a big deal in America. Read here to see what it is all about. You can search and find tons of bento lunch ideas. For this reason I am only linking to one bento lunch menu blog. But really there are tons!

Bento Menu Library at Laptop Lunches
20 quick & easy lunch recipes
The Kid Can Cook -we are not nut free, but some of these sandwiches looked fun & yummy
Once A Month Mom-doing something like this might work too cooking everything one day and having lunches available

Ok, that is only a few lunch ideas. Really there are tons!! And when I try some good lunch recipes I will let you all know. In the mean time share with me in the comments...what do you do for lunch at your house?
